Days after roasting — flavor peak
Coffee is a product with a flavor shelf life, not just storage. After roasting, the beans still degas carbon dioxide for several days, and then gradually lose aroma and acidity brightness. Coffee that has been lying in a warehouse for months before sale physically cannot give the same result in the cup — even if the package has an excellent production date. We roast to order, so your guest receives coffee in its best flavor window, not at the end of this window.
